It's Summer Time!! by Anna J Stewart

What? I'm sure regular readers of this blog are wondering what Anna is doing posting on a Monday. Well, Melinda is dealing with some unexpected family issues and asked me to step in. Which means you get me not once this week, but twice!  Lucky you, LOL.

I'm typing this on Sunday afternoon, here in Northern California where it's currently 90 degrees. I was out grocery shopping this morning at 8 and it was already hot. What the heck? Summer seems to speed up every year but at least that means it's time for my favorite food time.

Don't get me wrong. I'm not a grill girl and I don't BBQ (maybe some day), but come early June I'm all about salads and farmers' markets. Especially since I can't grow anything in my garden other than weeds (I've tried. Honestly, I've tried). Said weeds happen to be spectacular by the way.

So what are my favorite summer dishes? Well, this one is top of the heap, mainly because it's super simple to fix and easy to keep in the fridge for the week. Goes great with a sandwich or even thrown into a big green salad.

  2. Yum. We had Greek salad with tomatoes, cucumbers, and feta yesterday, and we eat a lot of bean or lentil salads. I love salads in the summer.

  7. Any and all fresh from the garden salads in summer are favorite fare, along with egg salad sandwiches when the girls are laying their daily eggs. Thanks for the recipe, I'll try it with beets and cukes, tho they might not be English cukes. It's definitely NOT summer yet in Maine, frost yesterday morning and today it's in the blustery mid-forties. More like chili con carne weather.

  8. Pamela is right...throw it on the sidewalk, lol! In the summer, my family loves potato salad. That's my hubby's version of comfort food. Give me a sliced watermelon and some salt, and I'm a happy summer girl!

  9. Here in North Mississippi, we went from winter to summer...not that I'm complaining, mind you. The salad looks great! I have the ingredients so I think I'll make that tomorrow!

  10. We had a week of summer, started the BBQ and salads, and now, well, back to jeans and sweaters so salads will have to wait.
