Keep Your Weeknights Tasty {by Laurie Tomlinson}

Laurie Tomlinson, here! It's mid-August, and whether you have school-aged people in your life or not, it's a busy time of year for everyone. There are work transitions with the upcoming change of seasons, school supplies to buy, and ALWAYS books to read (or write).

But I have you covered on the dinner front! Here are some quick weeknight options that definitely don't skimp on flavor when you're short on time:
  • Speaking of comfort food, Gimme Some Oven takes us all back to our childhood by making over Beef Stroganoff. I'm all about quick and easy when a weeknight calls for comfort food!
  • Taco Tuesday never tasted better with A Spoonful of Flavor's speedy Turkey Taco Quinoa Skillet. All the flavors you love in an easier (and healthier!) skillet.
  • Whoever said good things come in small packages must have been talking about these adorable Meatloaf Muffins from Love Bakes Good Cakes. I make these all the time and whip up mashed potatoes while they bake. So delicious!
  • Spice up your chicken dinner rotation with this Creamy Pesto Chicken from CakeWhiz.com. You can make a bunch and use it in sandwiches, pasta, or salad. So many possibilities!
Bon appetit, friends! I say why spend more time cooking and cleaning when you can be reading?

  3. These look great. I am always on the lookout for new recipes - especially fairly simple ones because I am not a great cook! I always get distracted and burn things! ;-)
