I have to admit to feeling pretty darn nostalgic over this past Memorial Day weekend. I went through my mother's old recipes looking for a "different" dessert to serve at a very small, socially distanced dinner. I found a standby from 1971. I don't think I've made this for at least a decade. I had to share it with all you great cooks.
Banana Split
Crust: 1 1/2 cups graham cracker crumbs
1 stick butter melted
Press this into the bottom of a 9x12 pan and bake at 350 for about 12 minutes. Cool in freezer.
Beat till fluffy:
1 stick butter
2 cups of powdered sugar
2 large eggs
1 teaspoon Vanilla
Once the crust is cold, spread the filling mix over the crust. Top with 3-4 sliced large bananas.
Top this with DRAINED #2 can crushed pineapple
Top this with 1 pint of whipped whipping heavy cream
Top this with Pecan halves
Top this with maraschino cherries
Chill for 1-2 hours
With the “Official” Memorial Day just passed for those
of us in the USA, I wanted to take a brief moment of thought for all those who
have served our country in every way to keep us safe. For our service and
military men and women, we are ever grateful, but today that definition of “service to
others” has taken on a broader scope.
For all the nurses, doctors, health care providers, the janitors, the
assistants and the administration staff around this country and the world, your
sacrifices are deeply appreciated by all of us. For every truck driver, farmer, sanitation
crew, factory worker, mask maker, EMT, Firefighter, animal shelter staff, and
the list goes on. For every person who risked the pandemic to keep life as “normal”
as could be expected amid fear and panic, thank you.

DeleteTalk about a rich dessert--I'm like Elizabeth when it comes to butter--heavy cream also has the power to set off cravings. My daughter-in-law is one of the nurses on the front line, so to speak. She worked in a covid unit, caught the virus, but has now recovered and is back at work. So far, my son and their two teen boys tested negative.
